Ingredients

  • 1 to 1.5 lbs venison tenderloin trimmed
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 1 tsp fresh rosemary chopped
  • 1 tsp fresh thyme chopped
  • 1 tbsp balsamic vinegar
  • Optional: 1 tsp smoked paprika for extra flavor

Equipment

  • Grill or grill pan
  • Meat thermometer
  • Mixing bowl
  • Tongs
  • Sharp knife
  • Cutting board

Method

  1. Prepare the Marinade: In a mixing bowl, whisk together garlic, olive oil, salt, pepper, rosemary, thyme, balsamic vinegar, and paprika if using.
  2. Marinate the Tenderloin: Place the tenderloin in a shallow dish. Pour marinade over the meat, coating it evenly. Cover and refrigerate for 30–120 minutes.
  3. Preheat the Grill: Heat the grill or grill pan to medium-high (about 400°F). Lightly oil grates to prevent sticking.
  4. Grill the Tenderloin: Cook the tenderloin 4–5 minutes per side for medium-rare, checking with a meat thermometer (130–135°F). Adjust time based on thickness.
  5. Rest and Slice: Remove from grill, rest 5–10 minutes. Slice against the grain and serve. Optionally drizzle with extra marinade or herb sauce.

Notes

  • Marinating overnight enhances flavor and tenderness.
  • Use indirect heat for thick tenderloins to avoid overcooking.
  • Slice thinly for sandwiches or salads the next day.
