Ingredients
  

  • 1 cup honey
  • 1 tsp lemon juice optional
  • ½ tsp ginger juice optional
  • Pinch of cinnamon or herbs optional

Equipment

  • Saucepan (heavy bottom)
  • Candy thermometer (optional but recommended)
  • Spoon or spatula
  • Lollipop sticks
  • Baking sheet or silicone mold
  • Parchment paper

Method
 

  1. Pour honey into a pan.
  2. Heat on low to medium flame.
  3. Stir slowly and cook until it becomes thick.
  4. Heat until it reaches hard candy stage (around 150°C / 300°F).
  5. Quickly pour onto parchment paper or molds.
  6. Insert sticks immediately.
  7. Let it cool and harden completely.

Notes

  • Do not overheat honey or it will taste bitter.
  • Work fast once honey reaches hard crack stage.
  • Keep liquid add-ins minimal for proper hardening.
  • Store in airtight container to avoid stickiness.
  • Not suitable for babies under 1 year old.
