Ingredients

  • 2 cups einkorn flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter softened
  • 1 cup sugar white or coconut sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk dairy or non-dairy
  • Optional: 1/2 cup chopped nuts or berries for extra flavor

Equipment

  • Mixing bowls
  • Electric mixer or hand whisk
  • Measuring cups and spoons
  • Cake tin (8-inch or 9-inch round)
  • Spatula
  • Cooling rack

Method

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour your cake tin, or line it with parchment paper for easy removal.
  2. Prepare Dry Ingredients: In a medium-sized bowl, whisk together the einkorn flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, beat the softened butter and sugar together using an electric mixer until light and fluffy.
  4. Add Eggs and Vanilla: Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start with the dry ingredients and end with the milk. Mix until just combined.
  6. Add Optional Ingredients: If you're adding chopped nuts or berries, gently fold them into the batter.
  7. Bake the Cake: Pour the batter into the prepared cake tin and spread it evenly. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool the Cake: Let the cake cool in the pan for 10 minutes before transferring it to a cooling rack to cool completely.
  9. Serve: Once fully cooled, frost with your favorite frosting or serve plain. Enjoy!

Notes

  • Texture: Einkorn flour produces a denser, more moist texture than regular cake flour. This makes for a heartier and more filling cake.
  • Flavor Variations: You can customize the flavor by adding lemon zest, cinnamon, or nutmeg to the batter for extra warmth and depth.
  • Storage: Store the cake in an airtight container at room temperature for up to 3 days. For longer storage, keep it in the refrigerator for up to a week.
  • Dietary Adjustments: For a dairy-free version, substitute the butter with coconut oil or plant-based butter and use a non-dairy milk (like almond or oat milk).
