  • 2 ripe dragon fruits preferably red-skinned varieties
  • 1 cup sugar
  • 2 tablespoons lemon juice freshly squeezed
  • 1/4 cup water
  • 1/2 teaspoon pectin optional, for thicker consistency
  • Pinch of salt

Method
 

  1. Prepare the Dragon Fruit: Cut the dragon fruit in half and scoop out the flesh. Chop it into small pieces and set aside.
  2. Combine Ingredients: In a medium pot, combine the chopped dragon fruit, sugar, lemon juice, and water. Stir to mix well.
  3. Cook the Mixture: Bring the mixture to a simmer over medium heat, stirring occasionally. Let it cook for 20-30 minutes, allowing the fruit to soften and the preserve to thicken.
  4. Add Pectin (Optional): If you prefer a thicker consistency, add the pectin and stir it in. Continue cooking until you reach your desired thickness.
  5. Jar the Preserves: While still hot, pour the preserve into sterilized jars, seal them tightly, and let them cool to room temperature.
  6. Store: Store the dragon fruit preserves in the fridge for up to a month

Notes

  • Adjust Sweetness: Feel free to adjust the sugar to your taste. Some dragon fruits are sweeter than others, so you may not need as much sugar.
  • Consistency: If you want a smoother preserve, you can strain out the seeds, but leaving them in adds texture and a bit of crunch.
  • Storage: Keep the preserves in an airtight jar in the fridge for up to 1 month. For longer storage, you can freeze the preserve for several months.
