  • 1 lb fresh morel mushrooms sliced
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Method
 

  1. Cook the pasta: In a large pot, bring salted water to a boil and cook the pasta according to the package instructions. Once cooked, drain and set aside.
  2. Sauté the mushrooms: While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
  3. Add the mushrooms: Add the sliced morel mushrooms to the skillet and sauté for about 5-7 minutes, until tender and lightly browned.
  4. Prepare the sauce: Reduce the heat to low, then add the heavy cream to the skillet. Stir well and let the cream simmer for about 3-5 minutes until it thickens slightly.
  5. Combine pasta and sauce: Add the cooked pasta to the skillet and toss gently to coat the pasta in the creamy morel mushroom sauce. Sprinkle in the grated Parmesan cheese and stir until the cheese melts into the sauce.
  6. Season and serve: Season with salt and pepper to taste. Garnish with fresh parsley if desired and serve immediately.
