Cornmeal Cookies Recipe

Cornmeal Cookies

Cornmeal cookies bring a rustic texture to the classic cookie recipe, thanks to the cornmeal’s slightly gritty feel. This gives the cookies a wonderful crunch while maintaining a buttery, slightly sweet flavour. With just a few simple ingredients, these cookies are easy to make and can be customized with your favourite add-ins. Whether enjoyed with a cup of tea or shared with friends, cornmeal cookies are a treat worth baking.

  • 1/2 tsp baking powder optional

Equipment

Method

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add Wet Ingredients: Add the egg and vanilla extract to the mixture, beating until well incorporated.
  4. Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, cornmeal, salt, and baking powder (if using).
  5. Mix Together: Gradually add the dry ingredients to the wet mixture, stirring until the dough forms.
  6. Scoop Dough: Use a spoon or cookie scoop to form dough balls and place them onto the prepared baking sheet, spacing them evenly.

  8. Cool: Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

  • Texture: Fine cornmeal will give a smoother texture, while coarse cornmeal will make the cookies crunchier. Choose according to your preference.
  • Add-ins: You can add chocolate chips, dried fruits, or chopped nuts to the dough for a fun twist.
  • Storage: Keep the cookies in an airtight container at room temperature for up to a week, or freeze them for longer storage.
  • Gluten-Free Option: For a gluten-free version, swap the all-purpose flour with a gluten-free flour blend.
