Ingredients
  

  • 2 cups rolled oats
  • 1/2 cup chopped nuts almonds, walnuts, or cashews
  • 1/2 cup dried fruits cranberries, raisins, or apricots
  • 1/4 cup seeds pumpkin, sunflower, or chia seeds
  • 1/4 cup honey or maple syrup
  • 2 tbsp coconut oil or nut butter like almond or peanut butter
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon optional
  • Pinch of salt

Method
 

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Mix the dry ingredients: In a large mixing bowl, combine the oats, chopped nuts, dried fruits, seeds, cinnamon (if using), and a pinch of salt. Stir until evenly mixed.
  3. Prepare the wet ingredients: In a separate bowl, mix the honey (or maple syrup), coconut oil (or nut butter), and vanilla extract. Stir until the mixture is smooth and well combined.
  4. Combine the wet and dry ingredients: Pour the wet mixture over the dry ingredients and stir until everything is well coated. The mixture should be sticky and hold together when pressed.
  5. Shape the bites: Using your hands or a spoon/ice cream scooper, form the mixture into small bite-sized balls and place them on the prepared baking sheet, spaced about 1 inch apart.
  6. Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the granola bites are golden brown and crispy.
  7. Cool and enjoy: Let the granola bites cool completely before serving. They will firm up as they cool.
