Ingredients

  • For the Biscuits:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold and cut into cubes
  • 3/4 cup milk
  • For the Apple Filling:
  • 2 large apples preferably Granny Smith or Honeycrisp, peeled, cored, and diced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • For Topping optional:
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon cinnamon

Equipment

  • Mixing bowls
  • Rolling Pin
  • Baking sheet
  • Knife
  • Oven
  • Pastry cutter or fork (for cutting in butter)
  • Spoon for filling the biscuits

Method

  1. Prepare the Apple Filling: In a skillet, melt the butter over medium heat. Add the diced apples, cinnamon, brown sugar, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the apples are soft and caramelized. Remove from heat and set aside to cool slightly.
  2. Make the Biscuit Dough: In a large mixing bowl, combine the flour, baking powder, sugar, and salt. Add the cold butter and cut it in with a pastry cutter or fork until the mixture resembles coarse crumbs. Pour in the milk and stir until the dough just comes together. Do not overmix.
  3. Assemble the Biscuits: Turn the dough onto a floured surface and roll it out into a rectangle, about 1/2 inch thick. Spoon the apple filling evenly over the dough, leaving a small border around the edges. Fold the dough over the filling, then cut into individual biscuits (about 2-3 inches in size).
  4. Bake the Biscuits: Place the biscuits onto a greased or lined baking sheet. In a small bowl, mix the sugar and cinnamon for the topping, then sprinkle it over the biscuits. Bake in a preheated oven at 375°F (190°C) for 18-20 minutes or until golden brown.
  5. Serve: Once baked, allow the biscuits to cool slightly before serving. For an extra indulgence, serve with a dollop of whipped cream or a scoop of vanilla ice cream.

Notes

  • For a richer flavor, you can substitute the milk with buttermilk.
  • Try adding chopped nuts like pecans or walnuts to the apple filling for added texture.
  • If you prefer a smoother filling, you can cook the apples longer to break them down further.
  • These biscuits are best served warm but can be stored in an airtight container for up to two days. Reheat in the oven to maintain their flaky texture.
  • Feel free to experiment with different spices like nutmeg or allspice for a unique twist on the classic apple pie flavor.
