Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • Whipped Cream Filling
  • 1 1/2 cups heavy cream
  • 2 –3 tbsp powdered sugar optional
  • 1 tsp vanilla extract
  • Berries & Topping
  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • Optional: powdered sugar mint leaves for garnish

Equipment

  • 9-inch round cake pans (2 or 3)
  • Mixing bowls

Method
 

  1. Preheat oven to 350°F (175°C) and grease the cake pans.
  2. Mix dry ingredients: Combine flour, baking powder, and salt.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs and vanilla one at a time, mixing thoroughly.
  5. Combine wet and dry ingredients: Alternate adding the flour mixture and milk until smooth.
  6. Bake sponge cakes: Divide batter into pans and bake 25–30 minutes or until a toothpick comes out clean. Cool completely on a rack.
  7. Whip cream: Chill heavy cream and beat with sugar and vanilla until stiff peaks form. Refrigerate until assembly.
  8. Assemble cake: Slice cooled sponge horizontally into layers. Spread whipped cream on first layer. Add a layer of berries. Repeat for all layers, topping with berries.
  9. Chill cake for 1–2 hours to set before serving.
  10. Serve and enjoy!

Notes

  • Berries: Fresh berries work best. If using frozen, thaw and drain thoroughly.
  • Whipped Cream: Keep cream cold and whip just before assembling.
  • Slicing: Use a warm knife and wipe between slices for clean cuts.
