Method
 

  1. Prepare the Cornmeal Base: Add cornmeal and water to a medium saucepan. Cook over medium heat while stirring frequently to prevent lumps from forming.
  2. Slowly Add Liquid: Once the cornmeal begins to soften, add milk gradually and continue stirring until the mixture becomes smooth and creamy.
  3. Add Sweetness and Flavor: Mix in sugar, butter, salt, and optional cinnamon. Stir until all ingredients are fully combined.
  4. Cook Until Creamy: Reduce the heat and simmer for 5-10 minutes until the Sofkee reaches your preferred thickness. Stir occasionally to prevent sticking.
  5. Serve Warm: Remove from heat and serve in bowls. Add honey, fruit, nuts, or cinnamon as desired.

Notes

  • If you prefer a richer texture, use whole milk or a creamy plant-based milk like coconut milk.
  • You can adjust the sweetness to your taste by adding more sugar or using honey.
