Ingredients

  • For the Tofu Spread
  • 200 g firm or extra-firm tofu pressed and drained
  • 1 tablespoon lemon juice
  • 1 tablespoon nutritional yeast
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon fresh herbs chives, dill, or parsley, optional
  • For the Bagel Assembly
  • 2 plain or everything bagels sliced
  • Cucumber slices
  • Tomato slices
  • Lettuce or sprouts
  • Avocado slices optional
  • Everything bagel seasoning optional

Equipment

  • Food processor or blender
  • Mixing bowl
  • Measuring spoons
  • Knife and cutting board
  • Toaster or oven
  • Spatula or spreading knife

Method

  1. Prepare the tofu: Press the tofu for several minutes to remove excess moisture. A drier tofu base creates a thicker and creamier spread.
  2. Blend the tofu filling: Add tofu, lemon juice, nutritional yeast, garlic powder, onion powder, salt, and pepper to a food processor. Blend until smooth and creamy.
  3. Adjust the flavor and texture: Taste the tofu spread and add more seasoning, lemon juice, or herbs according to preference. The final texture should be thick enough to spread easily.
  4. Toast the bagels: Slice the bagels in half and toast until the surface becomes lightly golden and slightly crisp.
  5. Build the tofu bagels: Spread a generous layer of tofu cream cheese on each bagel half. Add cucumber, tomato, lettuce, avocado, or other toppings.
  6. Finish and serve: Sprinkle with everything bagel seasoning or fresh herbs and serve immediat

Notes

  • Extra-firm tofu gives the spread a thicker cream cheese-like consistency.
  • Pressing the tofu properly prevents a watery filling.
  • The tofu spread can be prepared ahead and stored in an airtight container in the refrigerator.
  • For a spicy version, add chili flakes, hot sauce, or jalapeño.
  • For a more savory flavor, mix in smoked paprika or chopped roasted vegetables.
