Prep the veggies: Chop carrots, potatoes, onions, tomatoes, and mince the garlic.
Prep protein: Cut meat into small pieces, or rinse chickpeas.
Heat the pot: Add a little oil and warm it on medium heat.
Cook the onions: Stir until soft. Add garlic and cook for 30 seconds.
Add veggies: Toss in carrots and potatoes. Stir well.
Add spices: Sprinkle cumin, paprika, turmeric, cinnamon, salt, and pepper. Stir for 1–2 minutes.
Add protein: Stir until coated with spices.
Add broth: Pour in 2–3 cups and mix in the tomato paste.
Simmer: Lower heat, cover, and cook for 25–30 minutes, stirring sometimes.
Adjust flavor: Add more salt or broth if needed.
Finish: Stir in fresh herbs before serving.
