  • 2 carrots chopped
  • 2 potatoes chopped
  • 1 onion diced
  • 2 tomatoes chopped
  • 3 garlic cloves minced
  • Protein choose one
  • 1 lb chicken chunks
  • or
  • 1 lb beef chunks
  • or
  • 1 can chickpeas for plant-based
  • Spices
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp turmeric
  • A pinch of cinnamon
  • Salt and pepper to taste
  • Liquids
  • 2 –3 cups vegetable or chicken broth
  • 1 tbsp tomato paste
  • Fresh Herbs
  • Chopped parsley or cilantro

Equipment

  • Large pot or deep pan
  • Cutting board

Method
 

  1. Prep the veggies: Chop carrots, potatoes, onions, tomatoes, and mince the garlic.
  2. Prep protein: Cut meat into small pieces, or rinse chickpeas.
  3. Heat the pot: Add a little oil and warm it on medium heat.
  4. Cook the onions: Stir until soft. Add garlic and cook for 30 seconds.
  5. Add veggies: Toss in carrots and potatoes. Stir well.
  6. Add spices: Sprinkle cumin, paprika, turmeric, cinnamon, salt, and pepper. Stir for 1–2 minutes.
  7. Add protein: Stir until coated with spices.
  8. Add broth: Pour in 2–3 cups and mix in the tomato paste.
  9. Simmer: Lower heat, cover, and cook for 25–30 minutes, stirring sometimes.
  10. Adjust flavor: Add more salt or broth if needed.
  11. Finish: Stir in fresh herbs before serving.

Notes

  • You can swap potatoes for sweet potatoes for a sweeter flavor.
  • For a creamy version, stir in a splash of coconut milk at the end.
  • For spice lovers, add chili flakes or jalapeño.
  • Stores well for 3–4 days in the fridge and freezes for up to 2 months.
