Ingredients
  

  • 1½ lb boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ tsp cumin
  • ½ tsp black pepper
  • 1 tsp kosher salt
  • 3 tbsp Dijon mustard
  • 2 tbsp whole-grain mustard
  • 3 tbsp hot honey
  • 1 tbsp apple cider vinegar
  • 1 garlic clove grated
  • 1 cup uncooked quinoa
  • 2 cups water or low-sodium chicken broth
  • ½ tsp turmeric
  • 1½ lb sweet potatoes cubed
  • 3 cups shredded cabbage
  • 1 small carrot shredded
  • 1 tbsp lime juice
  • Crispy fried onions or shallots

Method
 

  1. Heat oven to 425°F (220°C).
  2. Season sweet potatoes with olive oil, paprika, garlic powder, onion powder, cumin, and salt. Roast for 25–30 minutes, turning halfway.
  3. Rinse quinoa. Cook with water or broth, turmeric, and salt. Simmer until tender, then fluff.
  4. Whisk Dijon mustard, whole-grain mustard, hot honey, apple cider vinegar, garlic, paprika, and salt.
  5. Season chicken with olive oil, balsamic vinegar, paprika, chili powder, garlic powder, cumin, pepper, and salt.
  6. Cook chicken in a hot skillet until browned and the thickest part reaches 165°F (74°C).
  7. Rest chicken for several minutes, then slice.
  8. Toss cabbage and carrot with lime juice and salt.
  9. Divide quinoa between bowls. Add chicken, sweet potatoes, and slaw.
  10. Drizzle with hot honey mustard and finish with crispy onions.

Notes

  • This is a Sweetgreen-inspired copycat, not an official Sweetgreen recipe.
  • Chicken thighs stay particularly juicy, but chicken breast can be substituted.
  • Keep sauce separate when meal prepping to prevent soggy ingredients.
  • Regular honey plus red pepper flakes can replace hot honey.
