Ingredients

  • Salad:
  • 4 cups fresh broccoli florets
  • ½ cup red onion finely chopped
  • ½ cup bacon bits cooked and crispy
  • ½ cup sunflower seeds
  • ½ cup raisins
  • ½ cup shredded cheddar cheese optional
  • Dressing:
  • ¾ cup mayonnaise or Greek yogurt for a lighter option
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar or honey/stevia for reduced sugar
  • Salt and pepper to taste

Equipment

  • Large mixing bowl
  • Small mixing bowl
  • Whisk or fork
  • Knife and cutting board
  • Measuring cups and spoons
  • Ice bath bowl (optional, for keeping broccoli crisp)

Method

  1. Prep the broccoli: Blanch the broccoli florets in boiling water for 1-2 minutes. Immediately transfer to an ice bath to stop cooking and keep them crisp.
  2. Combine salad ingredients: In a large bowl, mix the broccoli, red onion, bacon bits, sunflower seeds, raisins, and shredded cheese.
  3. Make the dressing: In a small bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.
  4. Toss the salad: Pour the dressing over the broccoli mixture and toss gently to coat all ingredients evenly.
  5. Chill: Refrigerate for at least 1 hour before serving to allow flavors to blend.

Notes

  • Make-ahead tip: Keep the dressing separate if preparing more than a few hours in advance to prevent soggy broccoli.
  • Variations: Substitute bacon with roasted chickpeas for a vegetarian version, or use yogurt instead of mayonnaise for a lighter option.
  • Serving ideas: Great as a side for BBQs, sandwiches, or picnic meals.
  • Storage: Store in an airtight container in the fridge for up to 2 days. Add sunflower seeds and bacon bits just before serving for extra crunch.
