Method
 

  1. Cook the Rice (or Cornmeal):CIn a medium saucepan, combine rice (or cornmeal) with 2 cups of water. Bring it to a boil and then reduce the heat to low. Let it simmer for 10 minutes, or until the rice is fully cooked and the water is absorbed.
  2. Add the Milk:CAdd the milk to the cooked rice (or cornmeal), stir well, and bring it to a simmer again. Let it cook for another 5-7 minutes, stirring occasionally.
  3. Sweeten and Season: Add sugar, butter (or ghee), and salt. Stir until the butter melts and the sugar dissolves. If you want a sweeter version, you can add vanilla extract.
  4. Simmer Until Thickened: Continue cooking over low heat until the mixture thickens to your desired consistency (around 5-7 minutes). Stir occasionally to ensure it doesn't burn.
  5. Serve and Enjoy: Once the sofkee is creamy and thick, remove it from the heat and spoon it into bowls. Add your favorite toppings like cinnamon, fruit, or nuts.
