- Place the rabbit pieces, carrots, potatoes, onion, and garlic in the slow cooker.
- Add the chicken broth, tomato paste, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 6-8 hours or until the rabbit is tender and the vegetables are soft.
- Serve hot with fresh herbs as garnish.
Notes
- You can substitute the rabbit with chicken if preferred.
- For a richer flavor, add a splash of red wine to the broth.
