Prepare the Eggs: Boil the eggs, peel them, and cut them in half or quarters. Set them aside.

Assemble the Puffs: Roll out the puff pastry and cut it into squares. Place a small amount of the spice mixture in the center of each square, then add the cut egg on top. Fold the pastry over and seal the edges.
Bake the Puffs: Preheat the oven to 400°F (200°C). Brush the egg puffs with a beaten egg wash for a golden finish. Place them on a baking tray lined with parchment paper and bake for 15-20 minutes or until golden brown.
Serve: Allow the egg puffs to cool for a few minutes before serving. Optionally, garnish with fresh cilantro.
