Ingredients
  

  • 6 large eggs hard-boiled
  • 1 sheet puff pastry store-bought or homemade
  • 1 small onion finely chopped
  • 1-2 green chilies finely chopped, optional
  • 2 cloves garlic minced
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder adjust to taste
  • 1/2 teaspoon garam masala optional
  • Salt to taste
  • 1 tablespoon oil
  • 1 egg beaten for egg wash
  • Fresh cilantro optional, for garnish

Method
 

  1. Prepare the Eggs: Boil the eggs, peel them, and cut them in half or quarters. Set them aside.
  2. Cook the Spices: Heat oil in a pan. Sauté onions, green chilies, and garlic until soft. Add the cumin, turmeric, chili powder, garam masala, and salt, then cook for another minute to let the spices bloom.
  3. Assemble the Puffs: Roll out the puff pastry and cut it into squares. Place a small amount of the spice mixture in the center of each square, then add the cut egg on top. Fold the pastry over and seal the edges.
  4. Bake the Puffs: Preheat the oven to 400°F (200°C). Brush the egg puffs with a beaten egg wash for a golden finish. Place them on a baking tray lined with parchment paper and bake for 15-20 minutes or until golden brown.
  5. Serve: Allow the egg puffs to cool for a few minutes before serving. Optionally, garnish with fresh cilantro.

  • Freezing: You can freeze assembled puffs before baking. When ready, bake from frozen for about 20-25 minutes.
  • Spice Level: Adjust chili powder and green chilies to match your preferred spice level.
  • Vegetarian Alternative: Swap eggs for sautéed vegetables like spinach, mushrooms, or paneer for a vegetarian version.
  • Egg Wash: For a crispy, golden exterior, use an egg wash. Skipping it will result in a less glossy finish.
