Ingredients
  

  • 1/4 cup balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey optional for sweetness
  • Salt to taste
  • Freshly ground black pepper to taste

Method
 

  1. In a small bowl or jar, combine the balsamic vinegar, Dijon mustard, and honey (if using).
  2. Slowly add the olive oil while whisking (or shaking if using a jar) until the dressing emulsifies.
  3. Season with salt and pepper to taste.
  4. Pour over your favorite salad or roasted vegetables, and toss to combine.
  5. Store any leftover dressing in an airtight container in the fridge for up to 1-2 weeks.

Notes

  • Customizing the dressing: If you like a tangier dressing, increase the amount of vinegar. For a milder flavor, add a bit more olive oil.
  • Storage: The dressing can be kept in the fridge for up to two weeks. Always shake or stir before using as the oil and vinegar may separate over time.
  • Make it spicy: Add a pinch of red pepper flakes to give it a spicy kick!
  • No honey? You can substitute with maple syrup or a sugar alternative like stevia for a sugar-free version.
