Ingredients
  

  • 12 oz 340 g spaghetti or linguine
  • 2 cans sardines in olive oil 4 oz each, drained
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves minced
  • 1 teaspoon red pepper flakes
  • Zest of 1 lemon
  • Juice of 1 lemon
  • ¼ cup fresh parsley chopped
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ cup reserved pasta water
  • 2 tablespoons grated Parmesan cheese optional
  • 1 tablespoon capers optional
  • 2 tablespoons toasted breadcrumbs optional garnish

Method
 

  1. Step 1: Cook the Pasta
  2. Bring a large pot of salted water to a boil.
  3. Cook spaghetti according to package directions until al dente.
  4. Reserve ¼ cup pasta water before draining.
  5. Drain pasta and set aside.
  6. Step 2: Prepare the Garlic Oil
  7. Heat olive oil in a large skillet over medium heat.
  8. Add minced garlic and sauté for 1 minute until fragrant.
  9. Stir in red pepper flakes and cook for 30 seconds.
  10. Step 3: Add the Sardines
  11. Add drained sardines to the skillet.
  12. Break them into bite-sized pieces with a spoon.
  13. Cook for 2–3 minutes until warmed through.
  14. Step 4: Add Lemon Flavor
  15. Stir in lemon zest and lemon juice.
  16. Mix well to combine all flavors.
  17. Step 5: Combine Pasta and Sauce
  18. Add cooked pasta to the skillet.
  19. Pour in reserved pasta water.
  20. Toss everything together until evenly coated.
  21. Step 6: Finish and Serve
  22. Add parsley, salt, and black pepper.
  23. Toss gently one final time.
  24. Top with Parmesan cheese, capers, or toasted breadcrumbs if desired.
  25. Serve immediately.

Notes

  • Use sardines packed in olive oil for the best flavor and texture.
  • Do not overcook the garlic, as it can become bitter.
  • Fresh lemon juice adds brightness and balances the richness of the sardines.
  • Add cherry tomatoes, spinach, or olives for extra Mediterranean flavor.
  • For a gluten-free version, use your favorite gluten-free pasta.
  • Leftovers can be refrigerated for up to 3 days.
