Method
- Combine the water and sugar in a saucepan over medium heat. Stir occasionally to dissolve the sugar.
- Once the sugar is dissolved, add the fresh rosemary sprigs.
- Let the mixture simmer for 5-10 minutes, tasting periodically to reach your desired rosemary flavor strength.
- Remove from heat and allow it to cool.
- Strain out the rosemary and transfer the syrup to a storage container.
- Store the syrup in the refrigerator for up to two weeks.
Notes
- For a sweeter syrup, you can adjust the sugar to your taste or experiment with using honey.
- If you prefer a stronger rosemary flavor, leave the rosemary sprigs in the syrup longer during the simmering process.
- Rosemary simple syrup works well in cocktails, iced teas, lemonades, or as a drizzle over desserts.
