Ingredients
  

  • 2 medium turnips peeled and cubed
  • 2 medium sweet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon fresh rosemary or thyme optional
  • Optional: 1 tablespoon honey or maple syrup 1 teaspoon paprika, 1–2 cloves garlic

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Peel and cube turnips and sweet potatoes into even pieces.
  3. Place vegetables in a mixing bowl and drizzle with olive oil.
  4. Season with salt, pepper, and optional herbs/spices. Toss to coat evenly.
  5. Spread the vegetables on a baking sheet in a single layer.
  6. Roast for 25–30 minutes, turning halfway through, until tender and slightly golden.
  7. Remove from oven, transfer to a serving dish, and serve warm.

Notes

  • For extra sweetness, drizzle honey or maple syrup before roasting.
  • Add garlic or paprika for more flavor.
  • Store leftovers in an airtight container for up to 3 days; reheat in the oven to retain crispiness.
  • Can be mashed instead of roasted for a creamy side dish.
