  • For the paneer
  • - 400 g paneer cut into 1-inch cubes
  • - 120 g thick Greek yogurt
  • - 1 tbsp ginger-garlic paste
  • - 1 tbsp lemon juice
  • - 1 tsp Kashmiri chili powder or paprika
  • - 1 tsp garam masala
  • - 1 tsp ground cumin
  • - ½ tsp turmeric
  • - ½ tsp salt
  • - 1 tbsp oil
  • - 1 bell pepper and 1 small red onion cut into chunks
  • For the green chutney
  • - 30 g cilantro leaves and tender stems
  • - 15 g mint leaves
  • - 1–2 green chilies
  • - 1 small garlic clove
  • - 1 tbsp lemon juice
  • - ½ tsp ground cumin
  • - ½ tsp salt
  • - 1 tsp honey or sugar
  • - 2–3 tbsp water
  • For assembling
  • - 12 slider buns
  • - 2 tbsp melted butter
  • - 1 small red onion thinly sliced
  • - ½ tsp chaat masala and a squeeze of lemon for the onion
  • - 1 cup shredded mozzarella or 4 slices pepper jack optional
  • - Chopped cilantro for garnish

Equipment

  • Mixing bowl
  • Measuring cups and spoons
  • Knife and cutting board
  • Blender
  • - Skewers (optional)
  • - Grill, skillet, or air fryer
  • Spatula
  • - Baking sheet and foil (optional)

Method

  1. Marinate the paneer: Mix the yogurt, ginger-garlic paste, lemon juice, spices, salt, and oil. Add the paneer, bell pepper, and onion chunks. Toss gently, cover, and refrigerate for at least 30 minutes.
  2. Prepare the chutney: Blend the cilantro, mint, chilies, garlic, lemon juice, cumin, salt, honey, and water until smooth.
  3. Thread the skewers: Alternate paneer and vegetables on skewers, leaving a little space between pieces.
  4. Cook the paneer: Grill or pan-sear for 3–4 minutes per side until golden and charred. Alternatively, air-fry at 180°C for 7–8 minutes, or cook in a skillet without skewers for 8–10 minutes.
  5. Toast the buns: Brush the cut sides with melted butter and toast in a hot skillet for 1–2 minutes until golden.
  6. Prepare the onions: Toss the sliced red onion with salt, chaat masala, and lemon juice.
  7. Assemble the sliders: Spread chutney on both bun halves. Add two paneer cubes, grilled vegetables, pickled onion, and optional cheese to each slider.
  8. Melt the cheese (optional): Arrange the sliders on a baking sheet, cover loosely with foil, and bake at 175°C for 8–10 minutes.
  9. Serve: Garnish with chopped cilantro and serve immediately with extra green chutney.

Notes

  • Yield: 12 sliders.
  • Prep time: 25 minutes, plus 30 minutes marinating.
  • Cook time: 15 minutes.
  • Use thick yogurt so the marinade coats the paneer well.
  • Avoid overcrowding the pan to achieve a good char.
  • Toast the buns and assemble just before serving to prevent sogginess.
  • Paneer can marinate for up to 24 hours in the refrigerator.
  • Store leftover components separately in airtight containers in the refrigerator for 3–4 days.
  • For a vegan version, use extra-firm tofu, plant-based yogurt, vegan butter, and suitable buns.
