Method

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line or grease your muffin tin.
  2. Prepare the dry ingredients: In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. Mix the wet ingredients: In a separate bowl, whisk together the sugar, eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Combine wet and dry ingredients: Slowly add the wet mixture to the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Add chocolate chips: Gently fold in the chocolate chips, making sure they are evenly distributed.
  6. Fill the muffin tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake: Place the tin in the oven and bake for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.

Notes

  • Storage: Store the muffins in an airtight container at room temperature for up to 3 days. You can also freeze them for up to 2 months.
  • Customization: Add nuts (like walnuts or almonds) or fruits (like banana or raspberries) for added texture and flavour.
  • Chocolate Variations: Feel free to experiment with different types of chocolate, such as white or milk chocolate chips, or even a drizzle of melted chocolate on top.
  • Don’t Overmix: To keep the muffins light and fluffy, avoid overmixing the batter. Stir until just combined to ensure the perfect texture.
