  • For the beef
  • - 340 g beef sirloin or flank steak thinly sliced against the grain
  • - 1 tablespoon soy sauce
  • - 1 teaspoon sugar or honey
  • - 1 teaspoon cornstarch
  • - ½ teaspoon black pepper
  • - 1 tablespoon neutral oil
  • For the stir-fry
  • - 340 g elbow macaroni or other short pasta
  • - 3 tablespoons neutral oil divided
  • - 1 medium onion cut into thin wedges
  • - 1 carrot thinly sliced
  • - 1 bell pepper sliced
  • - 3 cloves garlic minced
  • - 2 ripe tomatoes cut into wedges
  • - 2 tablespoons tomato paste
  • - 2 scallions sliced
  • - A handful of fresh cilantro for garnish
  • For the sauce
  • - 1 tablespoon oyster sauce
  • - 1 tablespoon soy sauce or 1 teaspoon Maggi seasoning
  • - 1 teaspoon sugar
  • - 60 ml reserved pasta water
  • - ½ teaspoon black pepper

Equipment

  • Large pot for boiling pasta
  • - Wok or large skillet
  • Colander
  • Cutting board and knife
  • Mixing bowl
  • - Small bowl for sauce
  • - Measuring spoons and measuring cup
  • Tongs or spatula

Method

  1. Marinate the beef. Combine the beef with soy sauce, sugar or honey, cornstarch, black pepper, and oil. Let marinate for 15–30 minutes.
  2. Cook the pasta. Boil the macaroni in salted water for about 1 minute less than the package instructions. Reserve ½ cup of pasta water, drain, and toss the pasta with 1 teaspoon of oil.
  3. Prepare the sauce. Mix the oyster sauce, soy sauce or Maggi seasoning, sugar, black pepper, and 60 ml of reserved pasta water in a small bowl.
  4. Sear the beef. Heat a wok over high heat and add 1 tablespoon of oil. Sear the beef in batches for about 1–2 minutes per batch until browned and mostly cooked. Transfer to a plate.
  5. Stir-fry the vegetables. Add the remaining 2 tablespoons of oil. Cook the onion and carrot for 2 minutes. Add the garlic and cook for 30 seconds, then add the bell pepper and cook for 1 minute. Add the tomato wedges and cook for another 1–2 minutes.
  6. Fry the tomato paste. Push the vegetables to one side of the wok. Add the tomato paste and fry for 30 seconds until it darkens slightly and becomes fragrant.
  7. Combine the pasta and sauce. Add the cooked macaroni and sauce mixture. Toss for 1–2 minutes until the sauce coats the pasta and the liquid is mostly absorbed.
  8. Finish the dish. Return the beef and its juices to the wok. Toss for 30 seconds to heat through. Taste and adjust the seasoning if needed.
  9. Garnish and serve. Top with sliced scallions and fresh cilantro. Serve immediately.

Notes

  • Avoid mushy pasta: Cook the macaroni slightly under al dente because it continues cooking in the wok.
  • Keep the beef tender: Slice thinly against the grain and sear in batches to avoid overcrowding.
  • Improve the sauce: Fry the tomato paste before adding the pasta, and use reserved pasta water to help the sauce cling to the noodles.
  • Substitutions: Ground beef, chicken, pork, shrimp, or tofu can replace the sliced beef. Vegetarian oyster sauce can be used for a vegetarian version with tofu and mushrooms.
  • Adjust the flavor: Add chili or Sriracha for heat, a pinch of sugar to balance excess tanginess, or a splash of soy sauce if the flavor is too mild.
  • Storage: Refrigerate leftovers in an airtight container for 3–4 days. Reheat with a splash of water until steaming hot.
  • Food safety: Do not reuse the raw beef marinade as a finished sauce. Ground beef should reach an internal temperature of 71°C (160°F).
