Prepare the Beans: Rinse beans. Soak overnight (optional). Canned beans can be rinsed and drained.
Cook the Beans: Simmer beans in 4 cups water for 1–1.5 hours (dried) or 10–15 minutes (canned) until tender.
Sauté Vegetables: Heat olive oil. Sauté onion, garlic, carrot, celery, and bell pepper until soft.
Combine Beans and Vegetables: Add beans to vegetables. Stir in herbs, salt, and pepper. Add diced tomatoes or bacon if using. Simmer 10–15 minutes.
Optional – Mash Some Beans: Mash a portion for creaminess while keeping some whole.
Serve: Garnish with parsley or a drizzle of olive oil. Serve with bread, rice, or vegetables.
