Ingredients
  

  • 1 cup husked wheat mote
  • 8 –10 dried peaches huesillos
  • 5 cups water
  • ¾ cup sugar adjust to taste
  • 1 cinnamon stick
  • Peel of 1 orange
  • Peel of 1 lime
  • 1- inch fresh ginger sliced thin
  • Ice cubes
  • Sparkling water optional

  • Large bowl (for soaking peaches)
  • Saucepan
  • Medium pot (for cooking mote)
  • Strainer
  • Large pitcher
  • Spoon
  • Glasses for serving

Method
 

  1. Soak Peaches: Soak dried peaches overnight in water.
  2. Cook Mote: Boil husked wheat until tender but firm. Drain.
  3. Make Syrup: Simmer soaked peaches with sugar, cinnamon, orange peel, lime peel, and ginger for 20–25 minutes. Remove peels and ginger.
  4. Combine: Add cooked mote to the syrup with peaches. Stir gently.
  5. Serve: Chill and serve with ice. Optional: top with sparkling water and garnish with citrus slices.

  • Soaking peaches overnight ensures soft, flavorful fruit.
