- Soak Peaches: Soak dried peaches overnight in water.
- Cook Mote: Boil husked wheat until tender but firm. Drain.
- Make Syrup: Simmer soaked peaches with sugar, cinnamon, orange peel, lime peel, and ginger for 20–25 minutes. Remove peels and ginger.
- Combine: Add cooked mote to the syrup with peaches. Stir gently.
- Serve: Chill and serve with ice. Optional: top with sparkling water and garnish with citrus slices.
