Boil the potatoes – Place peeled, chopped potatoes in a large pot of salted water. Bring to a boil and cook for 15–20 minutes, or until fork-tender.
Drain well – Drain potatoes in a colander and return them to the warm pot.
Mash – Using a potato masher or hand mixer, mash until mostly smooth.
Add flavor – Stir in butter until melted. Add mayonnaise and mix until creamy.
Adjust texture – Pour in milk a little at a time until desired consistency is reached.
Season and serve – Add salt, pepper, and any optional seasonings. Garnish with herbs or cheese if desired.
