Ingredients
  

  • 2 –3 large ripe mangoes peeled and diced
  • 2 –4 habanero peppers seeds removed for milder heat
  • 1/4 cup apple cider vinegar
  • 2 cloves garlic minced
  • 1 small onion diced
  • 2 tbsp lime juice freshly squeezed
  • 1 –2 tbsp honey or brown sugar adjust to taste
  • 1 tsp salt
  • Optional: 1 tsp ginger 1/2 tsp smoked paprika, 1 tbsp cilantro

Method
 

  1. Prepare Mangoes and Habaneros – Peel and dice mangoes. Wear gloves to handle habaneros safely; remove seeds for less heat.
  2. Sauté Aromatics – In a saucepan, sauté garlic, onion, and optional ginger for 2–3 minutes until fragrant.
  3. Simmer Ingredients – Add mangoes, habaneros, vinegar, lime juice, honey, and salt. Simmer 10–15 minutes until mangoes are soft.
  4. Blend Until Smooth – Transfer mixture to a blender or use an immersion blender. Blend until smooth. Adjust consistency with water if needed.
  5. Adjust Flavor – Taste and add more honey, lime juice, or vinegar to balance sweetness, acidity, and heat.
  6. Cool and Store – Pour sauce into sterilized jars or bottles. Refrigerate for up to 3 weeks.
