Prepare Mangoes and Habaneros – Peel and dice mangoes. Wear gloves to handle habaneros safely; remove seeds for less heat.
Sauté Aromatics – In a saucepan, sauté garlic, onion, and optional ginger for 2–3 minutes until fragrant.
Simmer Ingredients – Add mangoes, habaneros, vinegar, lime juice, honey, and salt. Simmer 10–15 minutes until mangoes are soft.
Blend Until Smooth – Transfer mixture to a blender or use an immersion blender. Blend until smooth. Adjust consistency with water if needed.
Adjust Flavor – Taste and add more honey, lime juice, or vinegar to balance sweetness, acidity, and heat.
Cool and Store – Pour sauce into sterilized jars or bottles. Refrigerate for up to 3 weeks.
