Method
- Prepare the Marinade: Combine olive oil, garlic, ginger, lime juice, soy sauce, honey, tomato paste, and spices in a bowl. Mix until everything is well blended.

- Marinate the Chicken: Add the chicken pieces and coat evenly with the marinade. Cover and refrigerate for 2–4 hours to allow the flavors to develop.
- Cook the Chicken: Heat a skillet or grill over medium-high heat. Cook the chicken until browned on the outside and fully cooked inside. The internal temperature should reach 165°F (74°C).
- Rest Before Serving: Allow the chicken to rest for a few minutes after cooking to help retain moisture.
- Serve: Finish with fresh lime juice, herbs, or tropical toppings. Serve with coconut rice, vegetables, or a fresh salad.
Notes
Chicken thighs are recommended for the juiciest texture, but chicken breast can also be used.
Adjust chili powder according to your preferred spice level.
Remove excess marinade before cooking to help the chicken brown properly.
Avoid over-marinating because acidic ingredients like lime juice can affect the chicken texture.
Leftover cooked chicken can be stored in an airtight container in the refrigerator for up to 3 days.
For a creamy variation, add coconut milk near the end of cooking for a tropical coconut-style sauce.
