Ingredients

  • 1.5 –2 lbs brisket point or chuck roast
  • 2 tbsp BBQ rub salt, pepper, paprika, garlic powder, brown sugar
  • 1 cup BBQ sauce sweet & smoky preferred
  • 2 tbsp butter or beef tallow
  • Optional:
  • 1 tsp smoked paprika
  • 1 tsp liquid smoke
  • 1 tbsp honey

Equipment

  • Oven
  • Roasting pan or baking dish
  • Aluminum foil
  • Sharp knife
  • Mixing bowl
  • Meat thermometer (recommended)
  • Tongs or spoon

Method

  1. Step 1: Prepare the Meat: Cut beef into 1.5–2 inch cubes. Trim excess fat but leave enough for flavor.
  2. Step 2: Season: Coat cubes evenly with BBQ rub. Let rest for 30–60 minutes for better flavor absorption.
  3. Step 3: Slow Cook: Preheat oven to 275°F (135°C). Place meat in a covered baking dish with butter. Cook for 2.5–3.5 hours until tender.
  4. Step 4: Check Tenderness: Meat should be soft and easy to pull apart. Internal temperature should reach 195–205°F.
  5. Step 5: Add BBQ Sauce: Toss cooked meat in BBQ sauce (and honey if using). Mix well.
  6. Step 6: Caramelize: Return to oven uncovered for 30–45 minutes until sticky and browned.
  7. Step 7: Rest and Serve: Let rest for 10–15 minutes before serving for best juiciness.

Notes

  • Use fatty cuts for best results—lean meat will dry out.
  • Do not add BBQ sauce too early or it may burn.
  • Covering during first cook keeps meat moist and tender.
  • Liquid smoke is optional but helps mimic smoker flavor.
  • For extra richness, add a spoon of butter before final baking.
