  2. Prepare the honey butter mixture: Add butter, honey, and sugar into a saucepan. Heat gently while stirring until the butter melts and the mixture becomes smooth.
  3. Mix with cornflakes: Place cornflakes in a large bowl. Pour the warm honey mixture over the cornflakes and gently mix until all cornflakes are evenly coated.
  4. Fill cupcake cases: Spoon the mixture into cupcake cases, making sure each one has an even amount.
  5. Bake the honey joys: Bake for around 10 minutes or until the tops become lightly golden.
  6. Cool and serve: Remove from the oven and allow the honey joys to cool completely before serving. Cooling helps them become firm and crunchy.

Notes

  • Use fresh cornflakes for the best crunchy texture.
  • Avoid boiling the honey mixture for too long, as it may make the honey joys too hard.
  • Mix gently to prevent crushing the cornflakes.
  • Allow the treats to cool completely before storing.
  • Store in an airtight container at room temperature for up to 3–5 days.
  • Add sprinkles, chocolate drizzle, or nuts for fun variations.
  • For a gluten-free option, use certified gluten-free cornflakes.
  • This recipe makes approximately 24 honey joys, depending on the size of each serving.
