- Prepare The Salmon: Pat the salmon fillets dry with paper towels to remove excess moisture. Brush lightly with olive oil and season both sides with salt and black pepper.
- Make The Honey Jerk Glaze: In a bowl, combine honey, jerk seasoning, minced garlic, lemon juice, soy sauce, smoked paprika, brown sugar, and fresh herbs. Mix until smooth and well combined.
- Marinate The Salmon: Place the salmon fillets in a shallow dish and coat with the honey jerk glaze. Allow the salmon to marinate for 15–30 minutes. Reserve some glaze for brushing during cooking.
- Bake The Salmon: Preheat the oven to 400°F (200°C). Place the salmon on a lined baking sheet and bake for 12–15 minutes until cooked through. Brush with extra glaze halfway through cooking for a caramelized finish.
- Air Fryer Method: Preheat the air fryer to 390°F (200°C). Place salmon fillets in a single layer and cook for 10–12 minutes, brushing with extra glaze halfway through.
- Grill Method: Preheat the grill to medium-high heat and oil the grates. Grill salmon for 4–5 minutes per side, brushing with the reserved honey jerk glaze until caramelized.
Notes
Adjust the amount of jerk seasoning depending on your preferred spice level.
Do not overcook the salmon; it should remain moist and tender.
Patting the salmon dry before cooking helps the glaze stick better and creates a better caramelized surface.
Avoid marinating overnight because the lemon juice can affect the texture of the fish.
Atlantic salmon, sockeye salmon, and king salmon all work well for this recipe.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat gently in the oven or air fryer to maintain the best texture.
