  • 1 cup granulated sugar
  • ¼ cup fresh lime juice
  • 1 tablespoon lime zest
  • ¼ cup water
  • 1 tablespoon corn syrup or glucose syrup optional, helps prevent crystallization
  • A small pinch of salt
  • Few drops of natural green food colouring optional

Method
 

  1. Step 1: Prepare the Lime Ingredients, Wash the limes properly and dry them. Grate the lime zest carefully, avoiding the white inner peel, which can add bitterness. Squeeze fresh lime juice and remove any seeds.

  2. Step 2: Make the Sugar Syrup, Add sugar, water, and corn syrup to a heavy-bottom saucepan. Heat the mixture over medium heat and stir gently until the sugar completely dissolves.
  3. Step 3: Cook the Candy Mixture, Allow the mixture to boil without stirring too much. Continue cooking until it reaches the hard crack stage (around 300°F/150°C if using a candy thermometer).
  4. Step 4: Add Lime Flavour, Remove the saucepan from heat and carefully mix in fresh lime juice, lime zest, salt, and optional food colouring. Stir gently until everything is combined.
  5. Step 5: Shape the Candies, Immediately pour the hot candy mixture into greased candy moulds or onto parchment paper. Allow the candies to cool completely until they become firm.
  6. Step 6: Store the Lime Candies, Once cooled, remove the candies from the moulds and place them in an airtight container. Keep them away from moisture to maintain their texture.
