  • 1 cup short-grain rice pudding or sushi rice
  • 4 cups milk or almond/coconut milk for vegan option
  • ½ cup sugar adjust to taste
  • 1 tsp gluten-free vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Pinch of salt
  • ¼ cup raisins optional
  • ¼ cup chopped nuts optional: almonds, pistachios, cashews

Method
 

  1. Prepare the Rice: Rinse the rice in cold water until the water runs clear. Optional: soak for 20–30 minutes to shorten cooking time.
  2. Cook the Milk Base: In a medium saucepan, combine milk, sugar, cinnamon, nutmeg, and salt. Heat gently over medium heat until warm, stirring frequently to avoid scorching.
  3. Combine Rice and Milk: Add rice to the milk mixture. Reduce heat to low and simmer for 25–35 minutes, stirring occasionally. Cook until rice is tender and pudding has thickened to a creamy consistency.
  4. Add Flavorings and Toppings: Stir in vanilla extract, raisins, and chopped nuts. Adjust sweetness or spices as desired.
  5. Serve: Serve warm or chilled. Optional: garnish with extra cinnamon, nutmeg, or fresh fruit.

  • Use short-grain rice for maximum creaminess; long-grain rice may be less creamy.
