  • 1 packet 7g active dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 cup warm water adjust as needed
  • 2 tbsp melted butter or vegetable oil optional, for richer flavor
  • 2 tbsp milk optional, for softer texture

Method
 

  1. Activate the yeast: In a small bowl, dissolve sugar in warm water and add yeast. Let it sit for 5–10 minutes until foamy.
  2. Prepare the dough: In a large mixing bowl, combine flour and salt. Gradually add the yeast mixture, melted butter, and milk (if using), mixing until a soft dough forms.
  3. Knead the dough: On a lightly floured surface, knead the dough for 8–10 minutes until smooth and elastic.
  4. First rise: Place the dough in a lightly greased bowl, cover with a towel or plastic wrap, and let it rise in a warm spot for 1 hour or until doubled in size.
  5. Shape the bakes: Punch down the dough and divide it into 6–8 portions. Shape each portion into a round or oval flat disc, about ½ inch thick.
  6. Second rise: Place the shaped bakes on a tray and cover. Let them rise for 15–20 minutes.
  7. Cook the bakes: Heat a griddle or frying pan over medium heat. Cook each bake for 5–7 minutes per side until golden brown and puffed. Alternatively, bake in a preheated oven at 375°F (190°C) for 15–20 minutes until golden.
  8. Cool and serve: Remove from heat and let the bakes cool slightly on a rack. Serve warm with butter, jam, cheese, fried fish, or any preferred filling.

Notes

  • For softer bakes, add a little milk or an extra tablespoon of butter.
  • Ensure water is warm, not hot, to avoid killing the yeast.
