  • 1 ½ cups ginger snap cookies crushed
  • ½ cup unsalted butter melted
  • 1 tsp ground cinnamon optional

  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 ½ tsp ground ginger
  • For the Pear Topping:
  • 3 ripe pears Bartlett recommended, peeled, cored, and sliced
  • 1 tbsp unsalted butter
  • 1 tbsp lemon juice
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • Optional Garnishes:
  • Whipped cream
  • Caramel sauce or honey

Method
 

  1. Preheat Oven: Begin by preheating your oven to 325°F (163°C). Prepare your springform pan by greasing it lightly and lining the bottom with parchment paper.
  2. Prepare the Crust: Crush the ginger snap cookies into fine crumbs using a food processor or by placing them in a ziplock bag and smashing them with a rolling pin. In a medium bowl, mix the cookie crumbs with melted butter and cinnamon (if using). Press the mixture firmly into the bottom of the springform pan, ensuring it is evenly distributed. Bake the crust for about 8-10 minutes until it’s golden brown, then remove it from the oven and allow it to cool while preparing the filling.
  3. Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Add sugar and vanilla extract, and continue mixing until smooth. Add eggs one at a time, mixing well after each addition. Stir in the ground ginger. Once combined, pour the cheesecake mixture over the cooled crust in the springform pan.
  4. Bake the Cheesecake: Place the cheesecake in the oven and bake for 50-60 minutes, or until the edges are set but the center still has a slight wobble. Turn off the oven, crack the oven door slightly, and allow the cheesecake to cool for about an hour. Then, refrigerate it for at least 4 hours, or overnight, to allow the flavors to set and the cheesecake to firm up.
  5. Prepare the Pear Topping: While the cheesecake is chilling, peel, core, and slice the pears. In a medium saucepan, melt butter over medium heat. Add the pear slices, lemon juice, cinnamon, and ginger. Cook for about 10-12 minutes, until the pears soften and become caramelized. Once done, remove from heat and allow them to cool.
  6. Assemble the Cheesecake: Once the cheesecake is fully chilled, remove it from the fridge. Spoon the cooled pear topping evenly over the cheesecake. Optionally, add a dollop of whipped cream or drizzle caramel sauce on top for extra sweetness.
