Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup water or milk for a richer taste
  • Vegetable oil for frying
  • Optional: 1 tablespoon sugar for a sweet version, cinnamon, grated cheese, or chopped jalapeƱos for added flavor

Equipment

  • Large mixing bowl
  • Rolling Pin
  • Skillet or deep frying pan
  • Spoon or tongs for frying
  • Paper towels for draining excess oil
  • Measuring cups and spoons

Method

  1. Prepare the Dough: In a large bowl, combine the flour, baking powder, and salt. Gradually add the water (or milk), mixing until a dough forms. Knead the dough for 5 minutes until smooth and elastic.
  2. Shape the Dough: Divide the dough into 6-8 portions. Roll each portion into a ball and flatten it into a circle about 1/4 inch thick. You can shape them into rounds, triangles, or squares.
  3. Heat the Oil: Heat about 2-3 inches of vegetable oil in a frying pan over medium heat. To test if the oil is ready, drop a small piece of dough in. If it sizzles and rises to the top, the oil is hot enough.
  4. Fry the Dough: Carefully place the flattened dough pieces into the hot oil. Fry for about 2-3 minutes per side, or until golden brown and crispy. Use tongs to turn them as needed.
  5. Drain and Serve: Once fried, remove the fry jacks and place them on paper towels to drain excess oil. Serve them hot with your favorite toppings like scrambled eggs, beans, cheese, or honey.

Notes

  • Sweet Fry Jack: Add 1 tablespoon of sugar to the dough and serve with honey or powdered sugar for a sweet version.
  • Savory Fry Jack: Top with shredded cheese or fill with jalapeƱos before frying for a savory twist.
  • Storage: Store leftover fry jacks in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for up to 5 days or freeze for up to 2 months.
  • Reheating: Reheat fry jacks in a skillet to restore their crispy texture. Avoid using the microwave as it can make them soggy.
