Heat the Oil: In a large skillet or wok, heat vegetable oil over medium-high heat.
Add Aromatics: Add minced garlic and grated ginger. Stir until fragrant (about 1 minute).
Add Mushrooms: Add Enoki mushrooms and stir-fry for 2-3 minutes until they start to soften.
Season: Add chili flakes, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes.
Sauce: In a small bowl, mix soy sauce, rice vinegar, and red pepper flakes. Pour over the mushrooms and stir-fry for another 1-2 minutes until the sauce thickens slightly.
Serve: Taste and adjust seasoning. Garnish with green onions and sesame seeds, and serve hot.
