Ingredients

  • 1 cup Einkorn flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar or honey
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup milk dairy or non-dairy
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract

Equipment

  • Mixing bowls
  • Whisk
  • Non-stick skillet or griddle
  • Spatula
  • Measuring cups and spoons

Method

  1. Prepare the Dry Ingredients: In a large bowl, whisk together the Einkorn flour, baking powder, sugar, and salt.
  2. Add the Wet Ingredients: In a separate bowl, whisk together the egg, milk, melted butter (or oil), and vanilla extract.
  3. Combine: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix – a few lumps are fine.
  4. Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes on one side, until bubbles form on the surface, then flip and cook for another 1-2 minutes on the other side, until golden brown.
  5. Serve: Stack your pancakes and top with your favorite toppings, such as maple syrup, fresh fruit, or a dusting of powdered sugar. Enjoy!

Notes

  • Don’t Overmix: Be gentle when mixing the batter. Overmixing can make the pancakes tough. A few lumps are perfectly fine!
  • Adjust Heat: If your pancakes are browning too quickly, reduce the heat slightly for even cooking.
  • Variations: Feel free to add-ins like chocolate chips, cinnamon, or berries to the batter for extra flavor.
