Ingredients
  

  • 2 cups 480 ml heavy whipping cream, cold
  • 1 cup 300 g sweetened condensed milk
  • 1/3 cup about 110 g honey
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon fine sea salt

Method
 

  1. In a bowl, whisk together the sweetened condensed milk, honey, vanilla extract, and salt until smooth.
  2. In a separate chilled bowl, whip the heavy cream to medium-stiff peaks.
  3. Gently fold about one-third of the whipped cream into the honey mixture to lighten it.
  4. Fold in the remaining whipped cream in two additions, taking care not to deflate the mixture.
  5. Transfer the mixture to a freezer-safe container and smooth the surface.
  6. Cover tightly and freeze for at least 6 hours, preferably overnight.
  7. Let the ice cream sit at room temperature for 5–10 minutes before scooping.

Notes

  • Use flavorful honey for a more noticeable honey taste. Mild honey creates a subtler flavor.
  • Avoid over-whipping the cream; medium-stiff peaks make folding easier and help maintain a light texture.
  • Honey contributes sweetness and can make frozen desserts softer, so the amount should not be increased substantially without adjusting the rest of the recipe.
  • For honey vanilla ice cream, add extra vanilla or use vanilla bean paste.
  • Store tightly covered in the freezer and use within about 2 weeks for the best texture and flavor.
  • Honey should not be given to children under 1 year old.
