Ingredients

  • 6 large eggs hard-boiled
  • 4 oz cream cheese softened
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • Food coloring optional for color, e.g., green, red, blue
  • Fresh parsley optional, for garnish
  • Paprika optional, for sprinkling on top

Equipment

  • Saucepan (for boiling eggs)
  • Mixing bowls (for preparing the filling)
  • Piping bag (optional, for neat presentation)
  • Knife (for slicing the eggs)
  • Spoon or fork (for mashing the yolks and mixing)
  • Measuring Spoons (for accurate seasoning)
  • Food coloring (optional, to add a magical touch)

Method

  1. Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, reduce the heat and let the eggs simmer for 10-12 minutes. After cooking, transfer the eggs to an ice bath to cool them quickly. Peel the shells carefully.
  2. Prepare the Filling: Cut the eggs in half lengthwise. Scoop out the yolks into a mixing bowl. Mash the yolks with a fork. Add the cream cheese, mayonnaise, Dijon mustard, paprika, cayenne pepper, salt, and pepper. Mix until smooth and creamy.
  3. Add Color (Optional): To create a dragon-like appearance, add a few drops of food coloring to the yolk mixture and mix until evenly colored. Green, red, or black work well for a magical, dragon-inspired look.
  4. Fill the Egg Whites: Spoon or pipe the creamy yolk mixture back into the egg whites. Use a piping bag for a neat presentation, or simply spoon the mixture in for a more rustic feel.
  5. Garnish and Serve: Sprinkle a little paprika on top for extra flavor and a pop of color. Garnish with fresh parsley for a finishing touch. Arrange the eggs on a platter and serve.

Notes

  • Make-Ahead: Dragon eggs can be made in advance. Store them in an airtight container in the fridge for up to 24 hours before serving.
  • Customization: Feel free to experiment with the filling. Add ingredients like crumbled bacon, smoked salmon, or avocado for a twist. You can also adjust the level of heat by adding more or less cayenne pepper.
  • Quail Eggs: For bite-sized dragon eggs, use quail eggs instead of large eggs. Boil for about 4-5 minutes since they are smaller.
  • Storage: Store leftover dragon eggs in the fridge for up to two days. They can be kept in an airtight container but are best consumed fresh for the best texture.
