  • 4 drumsticks or breasts optional
  • Marinade & Seasoning:
  • 2 tbsp olive oil or bacon fat
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • Sugar-Free BBQ Sauce:
  • 1 cup unsweetened tomato paste
  • 2 tbsp apple cider vinegar
  • 2 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste

Method
 

  1. Prepare Chicken – Clean, trim, and pat dry. Score skin lightly.
  2. Marinate – Mix marinade ingredients, coat chicken, refrigerate 2–12 hours.
  3. Preheat & Cook
  4. Grill: Sear 5–7 min per side, then move to indirect heat until done.
  5. Oven: Bake 35–45 min at 375°F (190°C), broil 2–3 min for crisp skin.
  6. Add Sauce – Brush sugar-free BBQ sauce in the last 10 minutes.
  7. Rest & Serve – Let chicken rest 5–10 min before serving.

  • Smoking Option: Use hardwood chips (hickory or applewood) for 1–2 hours.
