Method
 

  1. Prepare the Ingredients: Wash and peel the potatoes if desired, then cut them into small cubes. Dice the red and green bell peppers, as well as the onion, into small pieces.
  2. Season the Potatoes: In a large mixing bowl, combine the diced potatoes, bell peppers, and onions. Drizzle with olive oil and sprinkle the garlic powder, paprika, salt, and pepper. Toss until everything is evenly coated.
  3. Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 3-5 minutes to ensure it’s hot enough to begin cooking.
  4. Air Fry the Potatoes O’Brien: Place the seasoned potato mixture into the air fryer basket, spreading it out in a single layer. Air fry at 400°F for 15-20 minutes, shaking the basket halfway through cooking for even crispiness.
  5. Serve: Once the potatoes are golden and crispy, remove them from the air fryer and garnish with fresh parsley, if desired. Serve immediately as a side dish or snack.
