Ingredients
  

  • 1 kg Beef Chuck, Brisket, or Shank, cut into chunks
  • 1 can 400g Tomato Sauce
  • 1/2 cup Liver Spread pork or chicken liver spread
  • 2 medium Potatoes peeled and sliced
  • 2 medium Carrots sliced
  • 2 Bell Peppers sliced
  • 1 medium Onion chopped
  • 4 cloves Garlic minced
  • 2 tbsp Soy Sauce
  • 2 Bay Leaves
  • Salt and Pepper to taste
  • 2 tbsp Olive Oil or vegetable oil
  • Water or Beef Broth enough to cover the beef

Method
 

  1. Prepare the Beef: Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the beef chunks and brown them on all sides. This will help lock in the flavors and make the beef more tender.
  2. Sauté the Aromatics: Add the minced garlic and chopped onion to the pot. Sauté for about 2-3 minutes, or until the onion becomes translucent and the garlic is fragrant.
  3. Add the Tomato Sauce and Liver Spread: Pour in the tomato sauce and liver spread. Stir to combine the liver spread into the sauce, allowing it to thicken the mixture and add a rich, creamy texture.
  4. Simmer the Beef: Add enough water or beef broth to cover the beef. Drop in the bay leaves, then stir in the soy sauce, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1.5 hours, or until the beef is fork-tender.
  5. Add the Vegetables: Once the beef is tender, add the sliced potatoes, carrots, and bell peppers. Continue simmering for an additional 20-30 minutes, or until the vegetables are soft and the sauce has thickened.
  6. Adjust Seasoning: Taste the dish and adjust the seasoning, adding more salt or pepper if needed.
  7. Serve: Once the beef is tender and the vegetables are cooked, serve your Beef Caldereta hot, with steamed rice on the side to soak up the flavorful sauce.
