Ingredients
  

  • Halloumi:
  • 200 g halloumi cheese sliced 1 cm thick
  • 1 tsp olive oil optional
  • 1 tsp lemon juice optional
  • Pita:
  • 2 –4 soft or pocket pitas
  • Vegetables & Toppings:
  • 1 cup lettuce or mixed greens
  • 1 medium tomato sliced
  • ½ cucumber sliced
  • ¼ red onion thinly sliced
  • Fresh herbs mint, parsley, coriander
  • Sauce Options:
  • 3 tbsp tzatziki or hummus
  • Optional: garlic sauce spicy mayo, or harissa

Method
 

  1. Prepare the Halloumi: Slice halloumi into 1 cm thick pieces. Optional: marinate with olive oil and lemon juice for 10 minutes. Heat a frying pan on medium and fry halloumi 2–3 minutes per side until golden brown.
  2. Warm the Pita: Place pita in a skillet or oven for 2–3 minutes until soft and pliable. This helps prevent sogginess when adding fillings.
  3. Prepare Vegetables: Wash and chop all vegetables. Slice tomatoes, cucumber, red onion, and tear fresh herbs for an even distribution of flavors.
  4. Assemble the Pita: Spread your chosen sauce inside the pita. Layer halloumi slices, then vegetables and herbs. Fold or roll carefully so the filling stays inside.
  5. Serve: Serve immediately with optional sides like Greek salad, fries, or lemon wedges for a fresh, complete meal.

  • Don’t overcook halloumi; golden brown is ideal.
  • Use fresh, crisp vegetables for the best texture.
