Prepare the filling: In a mixing bowl, combine cream cheese, crab meat, garlic, green onion, soy sauce, salt, and pepper. Mix until smooth but slightly chunky. Taste and adjust seasoning.

Cook the rangoons: Fry: Heat oil to 350°F (175°C) and fry 2–3 minutes until golden brown. Bake: Preheat oven to 400°F (200°C), place on parchment, brush with oil, and bake 15–20 minutes. Air Fry: Preheat to 375°F (190°C), cook 10–12 minutes, shaking halfway.
