  • Fresh squid calamari – 1 pound (about 500g), cleaned and cut into rings
  • Panko breadcrumbs – 1 cup
  • Parmesan cheese optional – ¼ cup, grated
  • Garlic powder – 1 teaspoon
  • Onion powder – 1 teaspoon
  • Dried oregano – 1 teaspoon
  • Salt and pepper – to taste
  • Olive oil or melted butter – 2 tablespoons for coating
  • Lemon juice or zest optional – 1 teaspoon

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the squid: Clean and slice the squid into rings. Pat them dry with paper towels to remove excess moisture.
  3. Make the coating: In a shallow bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, onion powder, dried oregano, salt, and pepper.
  4. Coat the squid: Dip each squid ring into the olive oil or melted butter, then dredge in the breadcrumb mixture, pressing lightly to coat evenly.
  5. Bake: Place the coated calamari in a single layer on the baking sheet. Bake for 10-12 minutes or until golden brown and crispy.
  6. Serve: Remove from the oven and optionally drizzle with lemon juice. Serve immediately with your favorite dipping
