Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup all-purpose flour or oat flour
  • 1 –2 tbsp sugar optional
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt
  • Butter or oil for cooking

Method
 

  1. Add cottage cheese, eggs, and vanilla extract in a bowl. Mix well until combined.
  2. Add flour, baking powder, sugar, and salt. Stir gently to form a thick batter.
  3. Heat a pan on medium heat and add a little butter or oil.
  4. Pour small scoops of batter onto the pan.
  5. Cook until bubbles form, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings like honey, fruits, or syrup.

Notes

  • Don’t overmix the batter; it keeps pancakes soft and fluffy.
  • Use small-curd cottage cheese for best texture.
  • Adjust flour if batter feels too runny or too thick.
  • Medium heat is important to avoid burning outside while keeping inside cooked.
  • Best served fresh, but can also be stored and reheated easily.
