  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup frozen strawberries or mixed berries
  • 2 tablespoons peanut butter optional
  • 2 tablespoons mini chocolate chips
  • 1 tablespoon cocoa powder optional
  • Pinch of sea salt

Method
 

  1. Add the cottage cheese, honey, vanilla extract, and sea salt to a blender or food processor.
  2. Blend until the mixture becomes completely smooth and creamy.
  3. Add frozen berries, peanut butter, or cocoa powder if using. Blend again until fully combined.
  4. Stir in chocolate chips or other mix-ins using a spatula.
  5. Transfer the mixture into a freezer-safe container and smooth the top evenly.
  6. Cover and freeze for 3–4 hours until firm.
  7. Let the ice cream sit at room temperature for 5 minutes before scooping.
  8. Add your favorite toppings and serve immediately.

Notes

  • Use full-fat cottage cheese for the creamiest texture.
  • Blend thoroughly to remove the curd texture completely.
  • Adjust sweetness depending on the fruit you use.
  • For softer ice cream, stir the mixture halfway through freezing.
