Ingredients
  

  • 2 cups almond flour
  • ½ cup coconut sugar
  • 4 large eggs
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • 2 tbsp milk optional for extra moisture

Method
 

  1. Preheat oven to 350°F (175°C). Grease the cake pan or line with parchment paper.
  2. In a bowl, mix almond flour and baking powder.
  3. In a separate bowl, beat eggs with coconut sugar and vanilla extract until smooth.
  4. Combine wet and dry ingredients. Add milk if needed for a smooth batter.
  5. Pour batter into the prepared pan and smooth the top.
  6. Bake for 25–30 minutes or until a toothpick comes out clean.
  7. Cool on a wire rack before serving.

Notes

  • Can be served plain, dusted with powdered sugar, or frosted with cream cheese frosting.
  • Almond flour may make the cake denser than regular flour; avoid overmixing to keep it light.
