Method
- Preheat oven to 350°F (175°C). Grease the cake pan or line with parchment paper.
- In a bowl, mix almond flour and baking powder.
- In a separate bowl, beat eggs with coconut sugar and vanilla extract until smooth.
- Combine wet and dry ingredients. Add milk if needed for a smooth batter.
- Pour batter into the prepared pan and smooth the top.
- Bake for 25–30 minutes or until a toothpick comes out clean.
- Cool on a wire rack before serving.
Notes
- Can be served plain, dusted with powdered sugar, or frosted with cream cheese frosting.
- Almond flour may make the cake denser than regular flour; avoid overmixing to keep it light.
